Cajun Pot Roast

Another crock pot beef roast variation:

-1 beef roast, 2-2.5 lbs
-1 Tbsp dried Cajun seasoning (I actually used ~ 1/2 packet of Taco seasoning)
- 9 oz pkg frozen corn
- 1/2 cup chopped onion
-1/2 cup green bell pepper
-1 14.5 oz can tomatoes
-1/8 tsp pepper
-1/2 tsp hot sauce

Put it all in a crock pot and cook on low 8-10 hours.

(Again, I don't measure things that accurately and it was great with a little sour cream!)

Hot Reuben Dip

This sounds herendous, but if you like Reuben sandwhiches, you will love it. I've made it for several family things, and there's never any leftovers.

-1/2 lb sliced cooked corn beef coarsely chopped (the lunch meat or some from the deli work just fine)
-1 16 oz can sauerkraut
-3/4 cup thousand island dressing
-8 oz shredded swiss cheese
-1 3 oz pkg cream cheese

Put it in a crock pot on low, stir it occasionally as the cheeses melt. Serve with whatever crackers or bread you like. The little deli rye bread slices are great with it and so are triscuits.

(Side note: this is the original recipe. I don't really measure the stuff (like the corned beef or sauerkraut) that accurately, I add a whole 8 oz block of cream cheeze, and I also add extra thousand island dressing if it looks like it needs it. It's easy to play around with, and impossible to mess up!)

Pasta with Greens and Beans

This is super easy, and very healthy!

6 cloves garlic, coarsely chopped
4 c. Coarsely chopped broccoli rabe (escarole or spinach will also work)
1 1/2 c. cannellini beans, drained and rinsed
2 c. veg. broth
6 oz. pasta, cooked until al dente

Spray a large skillet with olive oil and add garlic, Cook over med. heat until softened - 5 min.
Add greens and beans, cook 2-3 min. Add broth and bring to boil.
Reduce heat and simmer 3 min, add cooked pasta and cook 2 more min.
Let stand 5 min before serving.
Top with Parmesan cheese.

*If I'm not baking I don't really mess with measuring cups, so I used a few spoonfuls of already chopped garlic, one bunch of fresh spinach, a can of beans and about 2 cups of water and a veg. bouillon cube. It was great :)

Creamy Italian Crock Pot Chicken

1 packet Italian dressing mix
4 boneless skinless chicken breasts
3/4 c. water
1 brick fat free cream cheese
1 can fat free cream of chicken soup
1 can mushrooms, drained

Place the chicken, dressing mix and water in crock pot. Cook on low 4-5 hours.

Heat cream cheese, soup and mushrooms in a sauce pan (to melt the cream cheese). Then add to crock pot and cook an additional hour.

Serve over rice or noodles. The sauce is super yummy!

Pulled Pork Sandwiches

2 lb Pork Tenderloin
1 cup Barbque sauce (I use a smokey flavor)
1/4 cup Soy Sauce
1/2 cup Brown Sugar
1 envelope Onion Soup Mix
1 medium onion chopped, sliced, diced (whatever you prefer)

Coat a skillet with oil and get it super hot then braise the tenderloin on all sides. Place pork in crock pot. Mix other ingredients together and pour over the pork. Cook on low for 8-10 hours. Pull the pork out of the crock and shredd with a fork. Put the shredded pork back into the crock and mix with the sauce. Serve on buns or hoagie rolls with cheese. This is yummy and even better as leftovers :)

Beef Marinade

I made this over the weekend - it's a basic marinade, but I'm thinking it would be great thickened a bit and tossed with whole wheat pasta and some veggies - I will work on it more this week and let y'all know what sort of luck I've had.

3/4 c reduced sodium soy sauce
1/4 c canola oil
1/4 c honey
1/4 c water
3 scallions, chopped
4 garlic cloves, finely chopped

Mix together in a bag and throw in your meat, marinate in the fridge for at least 2 hours.
While the meat is cooking bring the left over marinade to a boil for at least 5 min. and use as a sauce for the meat.
